Veg Masala curry

Veg masala is an easy to cook Indian curry to be eaten with rotis, puris or parathas. The best part is that it is filling, is nutritious and is liked by all genres. Available in major Indian restaurants of  Melbourne, this vegetable curry would delight your family.

  • Cauliflower - 500 Gms
  • Potatoes - 500 Gms
  • Green peas - 500 Gms
  • Carrots (chopped) - 2 cups
  • Onions (chopped) - 3
  • Tomatoes (chopped) - 3
  • Ginger garlic paste - 1 tbsp
  • Coriander - 1/3 cup
  • Chilli powder - 3 tsp
  • Coriander powder - 4 tsp
  • Curry leaves - 10 to 12
  • Garam masala powder - 3 tsp
  • Salt - to taste
  • Oil - 3 tbsp


  • Heat oil in a pressure cooker. Put mustard seeds and let them splutter.
  • Add onions and fry them till they become pink.
  • Add curry leaves, ginger garlic paste, turmeric, chilly, coriander, garam masala powder and saute for 2 minutes.
  • Add chopped tomatoes and other vegetables plus 1 cup water.
  • Add salt and some more water for gravy.
  • Close the lid of the pressure cooker and cook for 2 whistles on medium flame.
  • Switch off the stove and allow cooker to cool down.
  • After the pressure is released, you can serve the curry with roti, puri or paratha.
