Indians are famous for their culinary skills. From snacks to meals, you will find a huge diversity in Indian food. South Indian food is another delicacy unanimously loved for its unique taste and simple but traditional cooking approach. Medhu vada is a popular south Indian snack. Urad dal - 200 grams
Green chillies - 2
Ginger - 1 inch
(chopped) - 2 tbsp
Curry leaves - 1 sprig
Asafoetida - 3 to 4 pinch
Salt - According to taste
Water - 1/4 cup
Small onions - 10 to 12
Big onion - 1


  • Soak skinless urad dal for at least an hour.
  • Grind the dal with least amount of water such that the batter is fluffy.
  • Grinding should be done by taking parts of the dal a few number of times.
  • Sprinkling water often would help prevent jamming of the grinder.
  • Take the batter in a separate vessel.
  • Now finely chop onions, curry leaves, chillies and add into the batter.
  • Add the previously chopped coriander leaves, salt and asafoetida in the batter.
  • Mix the batter well.
  • Take oil in a heated frying pan to deep fry the vada.
  • Wet your right hand and make small ball of the batter.
  • With the thumb make hole in the middle of the ball.
  • Gently drop this vada in the oil.
  • Fry the vadas on medium flame and let both sides become golden brown and crisp.
  • Serve with coconut chutney or south Indian sambhar.
