Zaffaraini Rice

Zaffaraini rice is a speciality of Hyderabad, the southern city of India. Made with a dash of saffron the rice was considered as the food of royals. Served by many Indian restaurants in Melbourne this delicious dish is a favourite of all genres.

Ingredients:

  • Basmati rice - 2 cups(450 gms)
  • Sliced Onion - 1 cup
  • Ghee - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Cinnamon stick - 1 inch
  • Cloves - 2 to 3
  • Bay leaf - 2
  • Ginger - 1 tbsp
  • Saffron stands - 1 pinch
  • Milk - 10 tbsp
  • Chilli powder - 2 tsp
  • Curd - 2 tbsp
  • Almonds - 1/2 cup(50 gms)
  • Water - 4 cups
  • Salt - 1 tsp

Method:

  • Take 2 tablespoon warm milk and soak saffron in it for few minutes.
  • Rinse rice and soak for 30 min.
  • Take a saucepan and heat ghee in it.
  • Add cumin seeds and let them splutter.
  • Add onion, cloves, bay leaf, cardamom, cinnamon and mix well.
  • Fry till onion becomes golden brown.
  • Add drained rice into the pan now.
  • Now add almond, raisins, chilli powder, milk and fry for 5 more minutes.
  • Pour water into the rice. It should cover till one inch above the rice.
  • Put the stove on sim, close the lid of the pan and cook for 20 minutes.
  • Allow the pan to cool, mix rice with fork and serve with curd.
